In 2019, the Mappalians of Planet 61 had tried to create theirfirst passito wine by drying the grapes directly on the plant; unfortunately, the weather conditions in the area did not allow this experiment.

They worked hard, they built the racks and laid the grapes there to dry for 60 days. Once they have reached the right drying, they manually destem each single bunch and put it to ferment.

At the end of the fermentation, the wine is left to refine in barriques for a period of 18 months.

The result is a garnet, intense, consistent and sweet wine, with notes of overripe red fruit and a spicy note given by the passage in wood.

ORIGIN: it takes its name from the vineyard parcel from which the grapes are taken.

HARVEST PERIOD: beginning of October
VINIFICATION: the grapes are harvested in boxes and left to dry for a period of about 60 days on racks. After the drying period, the grapes are manually destemmed and sent to a steel tank where fermentation will begin. The must is filtered with Irish bags and places in barriques for over a year.

Analytical Features

ALCOHOL: 15% Vol.
RESIDUAL SUGAR: –
ORGANOLEPTIC EXAMINATION: garnet red color with orange reflections. The nose is complex and intense, with notes that recall black cherry and dried fig. Despite its high residual sugar, this wine maintains an excellent freshness both in the nose and in the mouth.
SERVING TEMPERATURE: 18/20°
FOOD PAIRINGS: aged cheeses accompanied by jams, or a piece of Bean to Bar chocolate.
