Technical Information
ORIGIN: the name “Mappale Quarantuno” was born from the will of Roberto and Riccardo to dedicate a wine to their father Marco, who at the age of 41 decided to make his dream come true by buying a farm.
PRODUCTION AREA: hills of Sessame, DOCG of Barbera d’Asti
VARIETY: 100% Barbera
BREEDING SYSTEM: guyot
AVERAGE AGE OF VINES: 9 years
HARVEST PERIOD: beginning of October/end of October
VINIFICATION: the selection of the grapes happens during harvest. Once the grapes arrive to the cellar, they are subjected to a soft crushing and destemming and then sent to thermo-conditioned steel tanks in order to favor a fermentation at a controlled temperature between 20-24°. This process aims to protect the freshness, elegance and the bouquet. Subsequently, there is a post-fermentation maceration period of about one month. The wine is then aged in tonneaux from different periods and toasting.
Analytical Features
ALCOHOL: 14,5% Vol.
ORGANOLEPTIC EXAMINATION: the color is ruby red, tending to garnet. Intense and vinous aromas, as well as persistent: cherry, plum, dark berries prevail and evolve into hints of jam and fruit in alcohol, intense balsamic, spicy and sometimes floral notes.
SERVING TEMPERATURE: 18/20°
FOOD PAIRINGS: it goes well with the dishes of the great Piedmontese cuisine, with meat dishes. Ideal with cheeses, especially aged or blue ones.
