VARIETY: 100% Barbera

HARVEST PERIOD: mid-October/early November
VINIFICATION: starting from a careful selection of the grapes, we arrive at the Nove Filari’s harvest, which takes place in the early hours of the morning, when the sun is still rising, in order to keep the grapes fresh.
Once it arrives to the cellar, the later is subjected to a slow and soft crushing and destemming; this process causes the grape to break as little as possible, then it is left to ferment in fully insulated tanks at a controlled temperature for 15 days with 2 pumpovers per day and a delestage. At the end of the fermentation, it remains on the skins for 2 months in order to have a better extraction of color and structure. Once this period is ended, the wine is separated from the pomace, which is subjected to a super soft pressing that does not even reach a bar. The wine is aged in tonneaux from different periods and toasting.

ALCOHOL: 15,5% Vol.
ORGANOLEPTIC EXAMINATION: garnet red color, due to the long stay in wood and in the bottle. The nose has a wide bouquet of aromas including ripe red fruits, strawberry, nutmeg, black pepper, pepper.
SERVING TEMPERATURE: 17/19°
FOOD PAIRINGS: perfect served in combination with grilled meats, stews, boiled meats, blue cheeses.
